Lamb Shoulder Chops are one of the lesser known and utilized cuts. They are surprisingly versatile. Braise, pan-fry or even grill them. Marinating is also a great method for this cut. There are so many ways to cook these chops, and they can be eaten similar to other steaks (medium rare, medium, well-done, etc.). As with steak, be sure to let them rest for a couple of minutes prior to cutting in.

Our favorite way to cook:

Salt/Pepper the steaks, then add a lot of salted butter, whole garlic and rosemary to the frying pan. Add the Chops and baste until the desired internal temperature is reached.
