Alberta Blade Steak, 226g
The Blade Steak is an underappreciated and lesser known cut of beef that makes an excellent alternative to a Ribeye. If you like a juicy, marbled Ribeye, but don't want to pay Ribeye prices, then this may be the steak for you. Expect similar fat veins that you would see in a Ribeye, but also expect a mix of soft and harder fats. Some minor trimming of the hard pieces before cooking will really elevate the enjoyability of this cut. The beef is generally soft and tender, cut from a very small area, referred to as the Eye of the Chuck/Blade. We love marinating this in the fridge for a day before tossing on the grill to a medium finish. With its great marbling, it holds the flavor of any seasonings perfectly.
