Sirloin Tip Roast Sirloin Tip is cut from the hindquarters, adjacent to the sirloin. It is also called "Round Tip Roast". This is a nice roast for Medium or Medium Rare (145F - 150F internal temp) cooking and can also be braised or stewed, as it can be a leaner cut of beef. Lots of flexibility with this roast! Cooking Tip: While it works well as a med-rare roast, it is also popular in the slow cooker. We suggest browning all sides in a hot frying pan, and then setting in a braising liquid, for an all-day slow-cook.
