Alberta Beef Briskets are perfect for the smoker or oven, and we like to keep a comfortable level of humidity, even with their higher fat covering. You can choose to trim the fat but we suggest cooking with it on as it will increase the flavor and juiciness. Slice it as a roast or pull it apart and cover in your favorite sauce. Just remember that the key to a brisket is patience! Low temperature and slow cooking will give you the very best results.
